Gemaakt van gepasteuriseerde volle koemelk kaas. Dit is de meest bekende blauwschimmelkaas uit Itali\u00eb. Behoord tot s werelds beste blauwschimmelkazen, samen met de Roquefort (Frankrijk) en Blue Stilton (Engeland). Kenmerkend door de groen grijze schimmels. Deze kaas heeft een zachte textuur en is zoet en scherp van smaak. De rijping varieert van 2 maanden.
